Domenico Stile, chef of two-Michelin-star Enoteca La Torre in Rome, now leads our kitchen as Culinary Advisor, alongside Culinary Director Emanuele Olivero.

What they bring is the cooking of their Italian family: handmade pasta, honest flavors, a modern and casual Italian cuisine.

Choosing a Mexican wine in Cabo

Start with a wine you already like. A familiar grape gives you something to compare when you open a Mexican wine list: whether you prefer lighter wines or bottles with more body. Tell the person serving you what you usually drink and what you plan to order.

Read the region as well as the grape

Mexican wine covers several growing regions. Balero’s white made with Sauvignon Blanc and Chardonnay comes from Valle de Guadalupe in Baja California. Its traditional-method sparkling wines come from Ezequiel Montes in Querétaro. The producer’s technical sheets name the region and the vintage for each bottle.

Guanajuato offers another point of reference. Tres Raíces made Sunset Monalisa Rosé 2023 with Grenache gris and Caladoc. Its competition record documents the blend and the gold medal it received in 2024.
