Vinos Balero at Sunset Monalisa
When Valentina Ortiz Monasterio visited Sunset Monalisa in 2025, the journal introduced Vinos Balero alongside photographs of her time at the restaurant. The visit put a person behind the bottles being discussed.

Two regions behind the bottles
Balero’s own wine sheets distinguish the origins. The 2024 white, made with Sauvignon Blanc and Chardonnay, comes from Valle de Guadalupe in Baja California. The 2024 rosé comes from the same valley and uses Grenache.
The 2023 sparkling wines come from Ezequiel Montes, Querétaro. Both use the traditional method and spend 18 months in bottle on the lees. The technical sheet is worth reading for the bottle you are choosing.
